Dairy free Tomato & Basil Frittata
A quick and easy recipe full of flavour. Can be served alongside fish or on its own with a simple salad
Ingredients
Serves 4
2 medium potatoes peeled and diced into small cubes
5 eggs
100ml water
Half an onion
1 pepper
2 tomatoes diced
Half tsp dried oregano
Half tsp dried basil
Half tsp onion powder
Half tsp garlic powder
Salt
Pepper
Balsamic vinegar or feta cheese (optional)
Method
Preheat oven to 200 degrees C
Fry the onions, potatoes and peppers in some olive oil in an oven proof pan until starting to brown. When done spread across bottom of the pan and set aside
In a bowl whisk together eggs, water, herbs and all seasoning and pour over the potatoes
Top with tomatoes and crumbled feta cheese if using and bake in the oven for 10-15 mins until set
Drizzle with balsamic vinegar if you like and serve with fresh salad
