Dairy free Fish Pie

This easy recipe makes a great tasty and filling dinner.  You can also use different toppings by swapping the celeriac with sweet potato, swede or cauliflower

Ingredients
1 Celeriac
500g of mixed Fish (salmon, smoked haddock, cod) cut into chunks
200g of Peas
1 large carrot grated
Handful of spinach
1 bunch of spring onions chopped
2 tbsp of grainy Mustard
1 can Coconut milk
Salt and pepper

Method
Preheat the oven to 200 C
Peel and chop up the celeriac and steam for 10 minutes until cooked through.  Blend with mustard until smooth. In a large pie tin add your fish, salt and pepper, peas, coconut milk, spring onions, spinach and carrot. Top with the celeriac mash and bake in the oven for 20-25 minutes until the fish is cooked through and the celeriac a little crispy on top.
