Homemade muesli
This muesli is high in wholegrains, nuts and seeds which provide good sources of zinc, B vitamins, fibre, magnesium and good fats which all contribute to energy production, reduce constipation as well as helping to keep you fuller for longer.
Ingredients makes about 1.5L
280g porridge oats
130g barley flakes (or quinoa flakes if gf)
40 pumpkin seeds
50g sunflower seeds
50g flaxseeds
100g mixed nuts e.g. almonds, walnuts, pecans
40g coconut flakes
Method
Preheat oven to 150 degrees C
Place coconut onto a baking tray and roast in the oven for 8-10 mins until coconut starts to turn brown. Careful not to burn!
In the mean-time add all other ingredients to a large bowl and mix together. You can chop the nuts up a little if you prefer a less chunky muesli or pulse in a hand blender.
When the coconut is done, remove from the oven allow to cool and add to your muesli mixture.
Store the mixture in an airtight container ready for the mornings! You can top with fruit or a little maple syrup for some sweetness.
