Tofu Vegetable Adobo

Ingredients
3 tbsp cooking oil
5 garlic cloves chopped
1 inch ginger peeled and sliced
5 tbsp apple cider vinegar
3 bay leaves
1 tsp black peppercorns
2 tbsp soy sauce (or tamari if gf)
1 large aubergine chopped
800g firm tofu cut into cubes
2 medium potatoes or 1 large sweet potato peeled and chopped into cubes
500 ml bone broth/veg stock

Method

  • Heat the oil in a large deep saucepan. Add the garlic and ginger and heat for 30 secs stirring

  • Add all the remaining ingredients except for the tofu. Stir and simmer for 20-30 mins until veg is soft

  • Add the tofu and simmer for another 5 mins

  • Serve with rice
