Brazil nut and cranberry chocolate
This is super easy to make and makes the kitchen smell amazing!! Cacao power is high in antioxidants and tryptophan, so it’s definitely a good reason to eat (a small amount) every day!
Ingredients
150g cocoa butter
6 tbsp cacao powder
8 tbsp maple syrup
1 tsp vanilla extract
300g brazil nuts roughly chopped
handful of dried cranberries
pinch of sea/rock salt
1 tsp peppermint or orange extract (optional)
Method
Melt the cocoa butter slowly in a glass bowl over a pan of hot water on very low heat, making sure the bottom of the bowl does not touch the water and it does not boil otherwise you’ll burn your chocolate! You may have to take the bowl off the heat occasionally if it gets too hot
When melted, stir and then add the other ingredients except for the nuts/dried fruit. Mix well
Add the nuts and cranberries and stir again to coat
Pour the mixture into a loaf tin or plastic tub
Put into the freezer to set for 1 hour
When set, remove from the tub and use a knife to chop the block into pieces. Store in the fridge.
