Roasted Nut & Seed Butter
A good way to get your nuts and seeds in! Easy and quick to make, high in protein, plant lignans and good fats. Makes a deliciously filling snack spread on oatcakes, fresh sough dough or as a porridge topping.
Ingredients
makes 500g
A mix of your choice of nuts and seeds. I like to use:
125g each of almonds, pecans, sunflower and pumpkin seeds
Method
Preheat oven to 180 degrees C
Place nuts and seeds onto a baking tray and roast in the oven for about 15 mins until they turn golden brown. Careful not to burn!
Allow to cool then add to high powered food processor with a pinch of salt
Blend until smooth
Store in airtight container in the fridge for up to a month
