Almond & Flax bread

This bread is a great gluten free substitute for when you need a sandwich fix! You don’t need much as this nutrient dense loaf is not like shop bought bread and can be very filling. It can also be sliced up and frozen ready to be toasted - top with avocado and poached egg or mushrooms and tomatoes for a quick and tasty lunch.

Ingredients
150g ground flaxseed (also known as linseed)
190g ground almonds
70ml water
4 eggs
40g melted coconut oil
2 tbsp bicarb of soda
half tsp sea salt

Method

  • Preheat oven to 170 degrees C

  • Add all ingredients to food processor and bend until smooth

  • Spoon into a lined loaf tin pressing down into all 4 corners with a wet spatula

  • Bake for 45 mins until golden brown

  • Remove bread from the tin and leave to cool on a wire rack before slicing
