No Bake Chocolate Torte

This recipe is great for dinner parties as it’s super easy and delicious! It is very rich so a little goes a long way. I like to serve it with oat fraiche drizzled with honey and grated ginger.

Ingredients

200g ginger oat biscuits

85g butter or coconut oil

300g dark chocolate pieces

250ml coconut cream

1 tsp vanilla extract

maple syrup to taste (optional)

Method

  • Blitz the biscuits in a food processor until sandy

  • Melt butter/oil in a saucepan and mix into ground biscuits in a bowl. Mix until combined and transfer to a lined 8 inch pie tin. Press mixture down firmly and store in the fridge whilst making the filling

  • Heat the cream in a saucepan until it just starts to simmer. Remove from heat and stir in chocolate pieces and vanilla extract. Stir until completely melted. Add a dash of maple syrup if needed.

  • Pour the filling over your biscuit base and place in the fridge to set for 2 hours

  • Serve with oat fraiche or fruit compote
