Bakewell Tart

This recipe came from a late night pregnancy cake craving! Using any ingredients I could find in the kitchen cupboard I made this in about 15 mins and it definitely satisfied my craving.

Ingredients (serves 6)

For the base:
200g ground almonds
40g coconut oil
1 egg
pinch of salt
1 tbsp maple syrup

For the filling:
250g jam (I make my own using maple syrup & frozen strawberries)
2 eggs
2 egg yolks
6 tbsp melted coconut oil
4 tbsp maple syrup
1 tsp vanilla extract
140g ground almonds
handful flaked almonds to decorate

Method

  • Preheat oven to 165 degrees C

  • Place all ingredients for the base except for the almonds into food processor and blend. Then add in almonds separately and mix by hand until it becomes a pastry ball

  • Press the pastry into base of a 25 cm pie dish. Pour the jam into the dish over the base and spread out evenly. Set aside

  • Mix all the ingredients for the filling except for the flaked almonds in a large bowl

  • Pour the filling over the jam base and sprinkle with almonds

  • Bake in the the oven for 40 mins
